Jerusalem artichoke (Helianthus tuberosus), also called topinambour, is a species of sunflower. It is a herbaceous perennial plant growing to 1.5â€“3 metres tall with opposite leaves on the lower part of the stem becoming alternate higher up. It contains high level of thiamin and useful amounts of niacin, iron, and carbohydrates.
