Fresh harvested vegetables are soon processed into puree, concentrate or powders. Raw material is processed in short time in order to preserve its organoleptic properties as much as possible: this is the key factor that makes our ingredients suitable for bakery, pastry and ice-cream preparation.
Purees and concentrates are available in aseptic packaging of 20-25kg, powders in 25kg bags

Vegetable purees obtained from the selection of the best fresh vegetables, processed within few hours from harvesting to preserve their organoleptic characteristics.

The gnocchi were made using only carrot purees, black carrots, red turnips and celery. In some cases to thicken the dough a small portion of potato puree was added and to increase the color a small part of our carrot, black carrot and red turnip concentrates.
